Everlasting Meatico DAE1500 All in One Dry Age & Seasoning Cabinet – Double Door

The Everlasting Meatico DAE1500 is a premium, high-capacity commercial aging and charcuterie cabinet engineered to expand specialty food production in large-scale butcheries, artisan delis, and busy Australian restaurants. Manufactured in Italy by Everlasting and imported by International Catering Equipment (ICE), this double-door climate system provides absolute microclimate control over your premium culinary stock.

Running on a standard 240V single-phase electrical supply, the DAE1500 empowers chefs and food producers to transform massive batches of raw ingredients into high-value house-made delicacies under strict sanitary parameters. It represents the ultimate production asset for venues looking to maximize revenue through bespoke dry-aged steaks, custom-cured salamis, and perfectly matured house cheeses.

Why the Everlasting Meatico DAE1500 is the best on the market

Standard commercial refrigeration cannot handle the complex biological processes required for large-scale dry aging and fermentation. Storing extensive batches of charcuterie or primal cuts in a regular cool room leads to spoilage or case hardening because temperature and humidity levels fluctuate wildly. The Everlasting Meatico DAE1500 solves this limitation by creating an expansive environment where moisture loss is controlled and completely predictable.

By managing the continuous relationship between air volume, humidity, and temperature across its wide two-door footprint, this climate cabinet allows safe enzyme breakdown in premium beef, accelerating flavour concentration without bacterial contamination. The inclusion of heavy-duty wire shelves and a robust hanging framework means operators can seamlessly customize internal layouts to accommodate massive stock profiles from heavy hanging rumps to large rows of cheese wheels.

Hospitality Industry Use Cases

  • High-Volume Commercial Butcher Shops: Showcase a massive selection of dry-aged rib eyes or T-bones directly on the retail floor, adding high-impact visual merchandising that drives premium profit margins.
  • Artisan Charcuterie Manufacturers: Maintain a stable environment to safely ferment, dry, and reduce substantial batches of traditional salami, Coppa, and prosciutto simultaneously.
  • Large Venues & Steak Houses: Offer unique culinary experiences by serving exclusive in-house dry-aged meats and large custom-seasoned charcuterie boards.
  • Specialty Food Wholesalers: Control internal relative humidity precisely to cure and age large volumes of specialty hard or soft cheeses, preventing unwanted Mold growth.

Benefits & Operational Advantages

True All-In-One Climate Versatility

The unit handles three distinct food preparation processes within a single expansive cabinet structure. Operators can configure the internal settings to dry-age whole primal, ferment and cure artisan salamis, or season cheese batches down to precise seasonal metrics.

Full Range Temperature and Humidity Mapping

Tailor the internal conditions exactly to your product requirements. The digital management board delivers complete regulation with a temperature range spanning 0°C to +30°C alongside a relative humidity control window running from 40% up to 95% RH.

Double-Door Production Capacity

Kitchen staff can optimize spatial volume to maximize production revenue. The reinforced wide internal framework safely accommodates approximately 200kg of hanging product, supported by professional stainless-steel components and wire shelving.

Key Features of the Everlasting Meatico DAE1500

  • Premium 304 18/10 Stainless Steel: Constructed inside and out with heavy-gauge European stainless steel for lasting rust resistance and easy sanitation.
  • Built-In Ultrasonic Humidifier: Automatically injects fine moisture mist into the chamber to maintain steady humidity curves and eliminate product dehydration.
  • High-Density Thermal Insulation: Extra-thick insulation walls minimize external temperature transfer, keeping energy use stable during long aging cycles.
  • Self-Closing Double Security Doors: Magnetic gaskets and self-closing hinges prevent accidental door cracks that could ruin an entire batch of aging stock.
  • Complete Accessory Starter Kit: Supplied out of the box with 6 wire shelves, 1 heavy-duty hook rail, and 4 industrial meat hooks to kickstart operations.

Cleaning & Maintenance Guide

Protecting your investment and ensuring sanitary biological compliance is simplified through smart structural choices:

  1. Water Filter Inspections: Because the integrated humidifier uses local mains water, checking your inline water filter regularly is essential in hard water areas to prevent calcium scaling on sensitive sensors.
  2. Sanitize Hanging Accessories: The supplied stainless-steel hooks, rail, and wire shelves can be completely removed from the 53mm guide tracks for thorough sanitizing between batch rotations.
  3. Wipe Down Stainless Surfaces: The 304-grade stainless steel interior allows operators to easily wash down fat residues or salt blooms using warm water and food-safe sanitizing spray.
  4. Gasket and Seal Care: Keep the magnetic door gaskets clean of oils and grease to maintain a perfect air seal, which keeps your internal humidity metrics accurate.

Frequently Asked Questions (FAQs)

Q: What are the ventilation and flooring requirements for an extensive 267kg cabinet?
A: Given its 267kg net weight and large 1500mm width, the DAE1500 must sit on a perfectly level, solid floor slab. Operators should ensure there is adequate airflow clearance around the cabinet sides and top so the refrigeration system can reject heat efficiently during long, non-stop cycles.

Q: How does the built-in humidifier manage water consumption during a 30-day salami reduction?
A: The intelligent controller continuously monitors the internal relative humidity against your program settings. It triggers the humidifier to tap the 3/4″ BSP water line and release a micro-fine mist only when levels dip, keeping your humidity perfectly stable for the full 30-day reduction without wasting water.

Q: Can I run a standard 10-amp power circuit to operate this double-door model?
A: No, the DAE1500 requires a 15-amp single-phase power circuit because its larger double-door compressor setup draws up to 2.6kW of power. Ensure your kitchen line features a certified 15A wall socket before delivery, avoiding the need for complex three-phase modifications.

Q: How do the fixed 53mm shelf guide spaces affect bulk trays or large meat configurations?
A: The built-in shelf brackets are permanently spaced at a 53mm pitch along the interior walls to guarantee heavy structural load capacity. However, you can freely remove or adjust the 6 supplied shelves across these steps to create massive vertical clearance for extra-large primal or deep storage trays.

Q: What is the operational benefit of the automatic defrost management system?
A: When aging products for weeks at a time, frost naturally forms on the cooling coils, which chokes airflow. The automated system schedules short, precise defrost patterns that clear ice buildup without spikes in the main cabinet temperature, protecting your sensitive ingredients from spoiling.
